Individual Pizzas-But Not What You Expect

***PIZZA TARTS***

  • 1 Package refrigerated pizza crust or (I used pie crust)
  • 1/2 Cup pizza sauce
  • 1 Cup shredded mozzarella cheese
  • 12 Pepperoni rounds
  • 5 Fully cooked link sausage( You can also add any other chopped pizza topping you prefer.  Mushrooms, onions, black olives,bell pepper.  Make it your way.

How To:

  1. Preheat oven to 400 degrees.
  2. Lightly coat a 12 cup muffin tin with oil or cooking spray. Only coat every other cup.  This allows the dough to expand and not touch the other dough.
  3. Soften dough as directed on box.
  4. Roll one crust half to 1/16-inch thickness on a lightly floured surface.
  5. Cut six rounds from a 6 inch sauce pan lid or a large round cookie cutter(Re roll dough as necessary to 1/16 inch).
  6. Fill each greased muffin cup with one dough round.
  7. Add one tablespoon of pizza sauce and a layer of mozzarella cheese.
  8. Add any other topping you prefer.
  9. Then add one final layer of sauce and cheese.
  10. Bake for about 10 to 12 minutes until dough is lightly browned.

***PIZZA BISCUITS***

  • 3 Cups baking mix
  • 2/3 Cup hot water
  • 1/2 Cup pizza sauce
  • 3/4 Cup shredded mozzarella cheese
  • 12 slices of pepperoni or 3 links of fully cooked sausage chopped.

How To:

  1. Preheat oven to 375 degrees.  Lightly coat a muffin tin with oil or cooking spray.
  2. Mix baking mix and hot water together until a soft dough forms.
  3. Using a tablespoon to measure, scoop a spoonful out of the dough and flatten with your hand..
  4. Place flattened dough in bottom of muffin cup.
  5. Cover each cup with approximately one teaspoon of pizza sauce.
  6. Add a layer of pepperoni or sausage.
  7. Cover with a sprinkling of shredded mozzarella cheese.
  8. Repeat using the rest of leftover dough measuring a tablespoon of dough and flattening it with your hand.
  9. Cover the sauce and cheese tucking in the top layer of dough.
  10. Bake for 10-12 minutes until dough starts to brown.

These reheat well in the microwave-just 20 seconds per biscuit.

***THEY CALL ‘EM PIZZA CUPCAKES***

Pizza Muffins

  • 1 1/2 Cups flour
  • 2 Teaspoons baking powder
  • 1 1/2 Cups milk
  • 2 Eggs
  • 2 Teaspoons dried italian seasoning
  • 2 Teaspoons salt
  • 1/2 Cup pizza sauce
  • 1 Cup shredded mozzarella cheese
  • Fully cooked pepperoni or sausage

How To:

  1. Preheat oven to 375 degrees.
  2. Grease the cups of a 12 count muffin tin.
  3. In a large bowl combine flour, baking powder, herbs and salt.
  4. Beat in the milk and eggs until combined.
  5. Add about two tablespoons of batter to each muffin tin then add a layer of cheese, followed by the sauce, then cheese again.  This will insure the sauce staying in the center of the cupcake.
  6. Top with pepperoni or sausage. Repeat until you’ve filled all twelve cups.
  7. Spoon about two tablespoons of the remaining batter on top of each cupcake.
  8. Bake until lightly browned about 20-25 minutes.  Test with toothpick until batter is fully cooked.
