Pistachio Pudding St. Patrick’s Day Treats


Start with a pouch of sugar cookie mix, add some kitchen ingredients and you have soft pistachio flavored cookies.

If you have green food coloring on hand, add a few drops.  It will make the cookies more festive.  However, green coloring is not necessary.

  • 1 Pouch 1lb.1.5oz sugar cookie mix
  • 1 Box (4 serving size) Instant pistachio pudding
  • 1/4 Cup all purpose flour
  • 1/2 Cup butter, Melted
  • 2 Eggs slightly beaten


  1. Preheat oven to 350 degrees.
  2. In a large bowl, stir together cookie mix, pudding mix and flour.
  3. Stir in melted butter and eggs until soft dough forms.
  4. Drop teaspoon or tablespoon full of the dough onto cookie sheets.  (I thought the batch with tablespoon full came out better)
  5. Flatten cookies slightly with your fingers.
  6. Bake 9-11 minutes until bottoms start to brown.


  • 1 Box(3.4oz) Instant pistachio pudding mix
  • 13/4 Cups all purpose flour
  • 3/4 Cup granulated sugar
  • 1/4 Cup Brown sugar
  • 1 t spn baking powder
  • 1 t spn baking soda
  • 3/4 t spn salt
  • 2 Eggs
  • 1 Cup milk
  • 1/2 to 1 t spn almond extract  or vanilla extract
  • 1/2 Cup vegetable oil


  1. Preheat oven to 350 degrees.
  2. Line muffin tin with paper liners.
  3. In a large bowl mix all dry ingredients-Pudding,flour,granulated sugar,brown sugar, baking powder, baking soda and salt.
  4. In another bowl, mix all wet ingredients-Eggs, extract, milk and oil.
  5. Combine wet and dry ingredients
  6. Bake 15-20 minutes until tester toothpick comes out clean.

NOTE:  This recipe made 12 large muffins.  I like my muffins small….so you could probably get 16 small muffins out of this batch.


  • 3/4 Cup White baking morsels
  • 6 Tablespoons butter
  • 1/3 Cup water
  • 3 Cups powered sugar
  • 1Package(4 serving size) Instant pistachio pudding


  1. Line an 8×8 square baking pan with foil and spray lightly with cooking spray.  Set aside
  2. In a large microwave safe bowl melt morsels, butter and water in the microwave on high for 1 minute
  3. Remove bowl from microwave and stir until chips are fully melted.  (If needed, microwave an additional 30 seconds.
  4. Stir dry pudding mix into microwaved mixture.
  5. Once completely combined, stir in powered  sugar,  One cup at a time.
  6. Press fudge into prepared pan.
  7. Refrigerate for 2 hours to set.
  8. Remove fudge from pan. Then remove foil.
  9. Cut into squares using a long kitchen knife.  Not a table knife.
