Quick and Easy Snack Bars

****OAT SNACK BARS****

Great for the lunch bag

  • 1/4 Cup sugar
  • 1/3 Cup light corn syrup
  • 2 3/4 Cups oats
  • 3/4 Cup unsalted butter or 12 tablespoons

HOW TO:

  1. Preheat oven to 350 degrees
  2. Line the base and sides of an 8x8inch cake pan
  3. Mix the butter, sugar, and syrup in a large saucepan and heat gently until the butter has melted
  4. Add the oats and stir until all the ingredients are combined.
  5. Add chocolate chips, nuts, or raisins(if you want a sweeter treat)
  6. Turn the mixture into prepared pan and level the surface
  7. Bake for 15-20 minutes, until just beginning to turn golden
  8. Leave to cool slightly, then cut into bars and remove from pan
  9. Store in airtight container

****FRUIT BREAD****

  • 2 CUPS mixed dried fruit
  • 1/3 Cup sugar
  • 1 Large egg
  • 1 1/2 Cups self-rising flour

HOW TO:

  1. Put the fruit in a large bowl, add 2/3 cup boiling water and leave stand for 30 minutes
  2. Preheat oven to 350 degrees
  3. Grease and line the base and sides of a 1 lb loaf pan
  4. Beat the 1/3 cup of sugar and the egg into the fruit
  5. Sift the flour into the bowl and stir until combined
  6. Turn into prepared tin and level the surface
  7. Bake the bread for about 50 minutes until risen and firm to the touch
  8. Test with skewer inserted into center of bread
  9. Leave loaf in tin for 10 minutes before turning out on a wire rack to cool

****CHOCOLATE REFRIGERATER LOAF****

No Bake

  • 10 oz fruit and nut chocolate bar
  • 6 Graham crackers
  • 31/2 ounces white chocolate
  • 9 Tablespoons unsalted butter

HOW TO:

  1. Grease and line the bottom and sides of a 1 lb loaf pan with parchment
  2. Place the butter in a heat proof large bowl, then break the fruit and nut chocolate into pieces and place in bowl with the butter
  3. Place the bowl over a barely simmering pan of 3 to 4 inches of water
  4. Stir chocolate gently until melted and smooth
  5. Remove bowl from pan and leave cool for 20 minutes
  6. Break the graham crackers into small pieces
  7. Finely chop the white chocolate
  8. Stir the graham crackers and white chocolate into the melted mixture until evenly combined
  9. Turn the mixture into the prepared tin and pack down gently
  10. Chill for about 2 hours until set
  11. Cut into slices
