Simple Meals

Vegetables and rice are nice

****RICE OLE’****

  • 1/2 Cup chopped onion
  • 1/2 Cup chopped green pepper
  • 1 Tablespoon vegetable oil
  • 2 Teaspoons chili powder or taco seasoning
  • 1/2 Teaspoon garlic powder
  • 1/4 Teaspoon salt
  • 1 16 ounce can tomatoes
  • 2 Cups COOKED rice

HOW TO:

  1. Saute’ onions and green pepper in oil until vegetable are tender but not brown
  2. Add seasonings, salt, tomatoes and COOKED rice
  3. Simmer and stir until flavors are blended and liquid is absorbed(about 10 minutes)

****FESTIVE RICE****

  • 1/2 Cup chopped onion
  • 1/2 Cup chopped celery
  • 1/2 Cup chopped green pepper
  • 1 Tablespoon margarine
  • 1 Cup COOKED rice
  • 1 Cup your choice of vegetable-brocolli, corn(any leftover in your refrigerator)
  • 1/4 Teaspoon salt

HOW TO:

  1. Saute’ onion, celery and green pepper in margarine
  2. Add COOKED rice, your choice of vegetables and salt
  3. Stir well and cook until mixture is heated through

****SPANISH RICE****

Add meat if you like

  • 1 Tablespoon cooking oil
  • 1/2 Cup chopped onion
  • 1/4 Cup chopped celery
  • 1 Cup water
  • 1/4 Teaspoon salt
  • 3/4 Cup uncooked rice
  • 2 Cups diced tomatoes(I used canned)
  • Your choice: 1/2 pound ground beef or ground turkey cooked and well drained of fat

HOW TO:

  1. In a large skillet, brown onions and celery in cooking oil.
  2. Add water, salt, rice and tomatoes
  3. Simmer until rice is tender(about 15 minutes) stir occasionally
  4. Add Cooked meat at this time
  5. Stir until heated through (about 5-10) minutes

Don’t forget Beans and Rice are nice too!
