Breakfast Bread

****BLUEBERRY BREAKFAST BREAD****

  • 1/2 Cup butter
  • 1 Cup white sugar
  • 2 Eggs
  • 2 Cups flour
  • 1 Cup applesauce
  • 1 1/2 Tsp baking powder
  • 1/2 Tsp baking soda
  • 1/4 Tsp salt
  • 1 and 1/2 Cups fresh or frozen blueberries

HOW TO:

  1. Preheat oven to 350 degrees
  2. Grease and flour one loaf pan
  3. Mix together:

1/2 Cup butter

1 Cup  white sugar

2 Eggs

4. Stir in

1 Cup applesauce

5.Stir in

2 Cups flour

1 1/2 Tsp baking powder

1/2 Tsp baking soda

1/4 Tsp salt

6. Fold in blueberries

7.Pour into greased and floured loaf pan

8. Bake 55-60 minutes

****Roll-Up-Bread****

  • 4 Tbsp. white sugar,divided
  • 3 Tbsp. all purpose flour
  • 1 Tbsp. cold butter
  • 3 Tbsp. ground cinnamon
  • 1 Tube (8oz)refrigerated crescent rolls
  • 2/3 Cup chocolate chips
  • 1Tbsp. butter melted

HOW TO:

  1. Preheat oven to 375 degrees
  2. For streusel:

In a bowl, mix 3 Tbsp. sugar and flour

Cut in butter until crumbly

Reserve half of the streusel for topping

Stir cinnamon and the remaining sugar into remaining streusel

3. Unroll crescent dough into one long rectangle; press perforations to seal

Sprinkle with chocolate chips and cinnamon mixture

Roll up jelly-roll style-start with the long side

Pinch seam to seal

4. Fold roll in half lengthwise; transfer to a greased 8×4 loaf pan

Brush with butter

Sprinkle with reserved streusel

5. Bake for 30-35 minutes or until golden brown

6. Cool in pan 10 minutes before removing to wire rack to cool completely

****SWEET BREAKFAST BREAD****

  • 1 Pkg. white cake mix(regular size)
  • 2 Large eggs
  • 2/3 Cup water
  • 1/2 Cup all-purpose flour
  • 1/4 Cup canola oil

TOPPING

  • 1 Cup packed brown sugar
  • 3/4 Cup chopped pecans or walnuts
  • 1/4 Cup butter-melted

HOW TO:

  1. Preheat oven to 350 degrees
  2. Reserve 1 cup cake mix for topping
  3. In a large bowl, combine eggs, water, flour, oil and remaining cake mix
  4. Beat on low speed for 30 seconds
  5. Beat on medium speed 2 minutes
  6. Transfer to a greased 13×9″ baking pan
  7. In a small bowl, combine brown sugar, chopped nuts and reserved cake mix
  8. Stir in melted butter until crumbly
  9. Sprinkle over cake batter
  10. Bake for 25-30 minutes or until a toothpick inserted in center comes out clean
