No Bake-Chocolate* Peanut Butter* and Marshmallow* Treats

****Rocky Road Mounds****

  • 2 Cups(12-oz)semi sweet or milk chocolate chips
  • 1 Cup mini marshmallows
  • 1/2 Cup finely chopped nuts-almonds, walnuts, pecans

HOW TO:

  1. Melt chocolate chips in a large microwave safe bowl
  2. To melt chips-heat on med-high for 1 minute, repeat 20 seconds at a time-Stir in between until melted
  3. Set bowl aside and cool (important) Let the melted chocolate cool just enough so it doesn’t melt the marshmallows when you add them to the melted chocolate chips
  4. Add the marshmallows and nuts to the melted chips
  5. Stir well
  6. Drop by teaspoon full onto wax paper or foil lined tray
  7. Chill 15 minutes or until firm

****SNACK SQUARES****

  • 1 Cup chocolate chips
  • 1/2 Stick unsalted butter or margarine(softened)
  • 1/2 Cup smooth peanut butter
  • 1/2 Cup your choice finely chopped nuts
  • 9 oz bag mini marshmallows

HOW TO:

  1. Line a 9×9 inch baking pan with heavy foil-Let foil overhang sides for easy lifting out.  Lightly spray foil with cooking spray
  2. In a HEAVY bottom saucepan, combine the chocolate chips, peanut butter, and 1/2 stick softened margarine
  3. Turn on LOW heat(important). Chocolate could scorch easily
  4. Stir as ingredients melt with long handle spoon until melted and smooth(sauce should be shiny)
  5. Remove pan from heat-allow to cool for 15 minutes
  6. Stir marshmallows and nuts into cooled chocolate mixture
  7. Spread mixture into prepared pan
  8. Use a rubber spatula to get all the chocolate sauce from inside pan
  9. Spread it over the marshmallows
  10. Chill 3 hours or overnight
  11. Cut into small Bars

****Chewy Chocolate Peanut butter Oatmeal Bars****

A portable snack bar

  • 1 Cup Peanut Butter
  • 1/4 Cup plus 2 tablespoons maple syrup or pancake syrup
  • 1 Cup rolled or quick oats
  • 2 1/2 Tablespoons unsweetened cocoa powder

HOW TO:

  1. Line an 8×8 square baking pan with parchment paper or wax paper(I used heavy foil). Set aside
  2. In a large microwave-safe bowl, add peanut butter and syrup
  3. Whisk together until well mixed
  4. Heat in 20-second intervals in the microwave until warm and fragrant, until mixture begins to dry out and become fluffy(about 4-7 rounds)
  5. Whisk in between heating increments
  6. Add oats and cocoa powder to the peanut butter mixture
  7. Stir and fold until thoroughly combined
  8. Pour this mixture into the prepared pan
  9. Use a rubber spatula to smooth into an even, tightly packed layer
  10. Refrigerate for 25-30 minutes or until firm and completely chilled
  11. Slice into bars
