Sweet food gifts

Gift giving isn’t just at Christmas time.  Did your neighbor help out and you would like to show how much you appreciated their help?  Make them a food gift, just to say an extra Thank You!

****PEPPERMINT BARK****

  • 2 Cups or 1 12oz package of good quality milk chocolate chips
  • 2 Cups or 1 12oz package of good quality white chocolate chips
  • 6 to 8 hard round peppermint patties(crushed in wrapper with the handle of a butter knife)
  • 1 Teaspoon peppermint extract

HOW TO:

  1. Line a baking sheet with parchment paper
  2. Melt the chocolate chips and white chips simultaneously in separate microwave safe bowls.  Stir every 20 seconds until chocolate in both bowls are completely melted.
  3. Add 1 teaspoon or more to your taste of the peppermint extract.  Stir well
  4. Spread the melted chocolate evenly over prepared pan
  5. Drop spoonfuls of white chocolate on top of chocolate
  6. Use the tip of a knife to swirl the two chocolates together
  7. Sprinkle the crushed peppermints over the swirled chocolate
  8. Refrigerate until set about 1 hour
  9. Bring bark to room temperature before breaking into bite size pieces

****STAINED GLASS WHITE FUDGE****

  • 2 12oz bags of good quality white chocolate chips
  • 1 can (14oz) Sweetened condensed milk
  • 1/8 Teaspoon salt
  • 1 1/2 Teaspoons vanilla extract
  • 1 1/2 Cups chopped gumdrops, spiced gumdrops, or assorted candy fruit slices(snip with kitchen scissors)

HOW TO:

  1. Line a 9-inch square pan with foil.  Edges over hanging sides. Spray foil with cooking spray
  2. In a heavy saucepan, combine the chips with the sweetened condensed milk and salt
  3. Cook and stir on low heat until everything is melted.  About 10 minutes.
  4. Remove from heat, stir in vanilla and sliced candies
  5. Spread into prepared pan
  6. Cover and refrigerate until firm.  About 3 hours
  7. Remove fudge from pan and foil and cut into pieces

****CAPPUCCINO MOCHA MIX****

  • 6 tablespoons plus 2 teaspoons instant espresso coffee
  • 3 tablespoons plus 1 teaspoon unsweetened cocoa powder
  • 1 1/4 cup powdered nondairy creamer
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

HOW TO:

  1. In a medium bowl, stir together espresso coffee powder, cocoa, nondairy creamer, sugar, and cinnamon
  2. Store tightly covered
  3. For a gift label:  For each cup of cappuccino, measure 2 to 4 tablespoons mix into a coffee mug and stir in 6oz of hot water

This makes 2 1/2 cups mix
