Just a Pound or Two

There are so many meals you can create out of a pound or two of ground beef.  The options seem endless.  I prefer a quick and easy meal most days but sometimes I feel like putting in the effort for a pan of lasagna or cabbage rolls.

Since most recipes serve 4, I usually get 2, and sometimes 3 meals out of entree.  Instead of serving the ‘leftovers’ the next day I will wait 2-3 days so it doesn’t get boring.  Monday’s meatloaf for dinner becomes Wednesday’s meatloaf sandwich for lunch.  I also utilize the freezer as much as possible and make an effort to regularly pull something out so that things don’t stack up.  I also enjoy sharing things with a neighbor when I can.

I’ve compiled a list of some of my favorite entrees made with ground beef.  You can substitute ground turkey or chicken and even make most of these vegetarian if you want.
Variety is the spice of life!  Maybe these suggestions will inspire you make something you’ve not enjoyed in a while.
Start with 1# ground beef, and you can make:
Tacos, burritos, taco salad, walking tacos, nachos meatloaf, sandwiches Sloppy Joes Chili, chili mac or Cincinnati style chili, spaghetti, hamburgers. Get creative with the toppings! Marzetti/goulash, hamburger stroganoff, meatballs/meatball subs, Swedish meatballs, BBQ meatballs, appetizer style lasagna, stuffed shells, manicotti, stuffed peppers, cabbage rolls, casseroles galore, and good old Shepherd’s pie!
