Easy Go-To Chicken

The new year is around the corner and you might be thinking that a new year’s resolution might be in order; such as eating a little more healthy and trying to get your pants to fit a little better.  Well, here is my go to recipe for a low fat and healthy dinner using chicken breasts.
4 chicken breasts
1 t. salt
1/2 t. pepper
2 T. EVOO  (extra virgin olive oil)
1 T. lemon juice
3 cloves garlic, minced
Season the chicken with S & P.  In a small bowl, whisk the EVOO, lemon juice and garlic.
Transfer to a zip lock bag and put in chicken.  Massage the chicken into the marinade.  Refrigerate a minimum of thirty minutes.
Preheat the grill to medium high.  Brush the grill with oil.  Remove chicken from the bag and place on the gill.  Cook for about 15 minutes, flipping halfway through.  Once cooked remove the grill and let sit for five minutes before serving.
