Some days it’s just too much effort to drag out your electric mixer, but you’re still hankering for a sweet snack. Here’s a great recipe to bring out then:
PEANUT BUTTER BLONDIES
1/2 Cup Butter,
1/2 Cup Creamy Peanut Butter
1 1/2 Cups packed Brown Sugar
2 Eggs
1 Teaspoon Vanilla
1 1/2 Cups Flour
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Cup Chocolate Chips, or White Chips or Butterscotch Chips
1 Large or 2 Small overripe mushy bananas, (thawed if frozen), optional but really good
Melt the butter and peanut butter together, stir in the brown sugar. Beat by hand, adding 2 eggs and the vanilla. Stir in the flour, baking powder, and salt. Add the chocolate chips and mashed banana if using.
Bake in a greased and floured 13 x 9″ pan, 350*, about 20 minutes, a bit longer if using the banana. Sprinkle with powdered sugar if you like.
