Banana Nut Bread

Ingredients:

3 large overripe mushy bananas
1/3 cup melted butter
3/4 cup packed brown sugar
1 large egg, beaten
1 teaspoon vanilla
1/4 cup sour cream or Greek yogurt, for moisture
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup chopped walnuts, toasted, plus more for topping
Extra brown sugar for sprinkling on top

Method:

Preheat oven to 375*
Mash bananas with a fork, mix with melted butter until combined
in egg, sugar, vanilla, and sour cream
Fold in dry ingredients and walnuts, don’t overmix
Pour into pan, sprinkle walnuts and brown sugar on top
Bake, 55-65 minutes until toothpick comes out clean
Cool in pan for 10 minutes, then turn out onto a rack
Cool completely before cutting for the cleanest edge
