Cranberry Nut Bread

This quick bread is a staple for holiday gatherings, and it also makes a dandy gift.Β  This recipe comes from Allrecipes Magazine.

CRANBERRY NUT BREAD

Mini Cranberry Nut Bread

2 cups flour
3/4 cup sugar
3/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda.

1 cup coarsely chopped cranberries (from frozen)
1/2 cup chopped walnuts or pecans

1 egg
2 Tablespoons oil
1 Tablespoon grated orange peelΒ  (1 large orange)
3/4 cup orange juice

Whisk the dry ingredients together.Β  Add the berries and nuts.
Blend the egg, oil, peel, and juice in a smaller bowl, then dump into the dry stuff and mix well.
Grease and flour a bread pan (or two mini-pans).Β  Bake at 350* for about 30 minutes for a standard pan, or 20-25 for a mini pan.Β  Cool, then remove from pan.
To make this a little more special,Β  whip up your best powdered sugar glaze and drizzle it on top of the cooled bread.

Note #1:Β  Β Use frozen cranberries because if you try to chop fresh ones they kind of explode.
Note #2:Β  If you like a good dense bread, add more berries but put in a little extra sugar, too.
Makes one large loaf or 2 mini loaves.
