Easy Side Dish for a Special Breakfast**

WALNUT DATE SNACK BARS

INGREDIENTS:
1 package yellow cake mix*
3/4 Cup brown sugar
3/4 Cup margarine or butter, melted
2 eggs
2 Cups chopped dates (or in combination with Craisins, dried cherries, etc) – FLOURED*
2 Cups chopped walnuts, optional

INSTRUCTIONS:

Preheat oven to 350*. Generously grease a 13 x 9 ” pan.

Combine cake mix and brown sugar, blend well
Add melted margarine or butter and eggs.  Beat 2 minutes.
In a separate bowl, combine dates/dried fruit and optional walnuts, mix well.
Stir date-nut mixture into cake batter, blend well.  Batter will be stiff.
Spread in greased pan.  Bake at 350 for 30-40 minutes or until edges are light brown.
Cool 10 minutes,  Run a knife around the edges to loosen.
Then cool for 1 hour, cut into bars.  Store tightly covered.

  • *Take a couple spoonsful of the dry cake mix to flour the dried fruit.  This will help them not to sink to the bottom of the pan.
  • **And since it has fruit in it, it’s almost healthy!  Makes a nice hostess gift too.
