The following is a Windish / Slovenian recipe, obviously not too exact from Mary Lee Cipriano as made by her grandmother. The Windish are a nomadic tribe that moved thru Yugoslavia. Windish men are called Windochs, the women are called Windbags. Enjoy this cake. No preservatives so it doesn’t last long. Bake it and share with your neighbors.
MOON CAKES
INGREDIENTS:
1/2 pound butter
8 large egg yolks, maybe a few extra large, but not jumbo
9 heaping T sugar w/the biggest soup spoon you have.
11 heaping T flour, unsifted
3 tsp baking powder, heaping-ish
Juice of 1/2 lemon or 1 T Real Lemon Juice
8 egg whites, beaten til stiff
1/2 pound chopped/crushed walnuts mixed w some sugar
INSTRUCTIONS:
Smear oblong glass pan 9×13 with Crisco/flour. Set aside.
Beat butter some, add sugar and beat til REALLY fluffy
Next add egg yolks, one at a time
Add lemon juice
Add baking powder
Add flour, 11 heaping tablespoons. Don’t overheap
When ready (?) add beaten egg whites all at once and fold in by hand.
Pour into prepared pan rolling to get batter into corners
Add nuts/sugar mixture on top
Bake at 400 for 30 minutes
Cool til cool
Slide the whole cake out of the pan. This is tricky. Maybe ask for help.
When completely cool, use an inverted glass to cut the cake into little crescent moons. Eat your mistakes.
