Cinnamon Sugar Donut Sweet Bread

If you are a donut lover, this sweet bread is perfect for you. Although it looks like it has many steps to follow, it’s actually simple to prepare:  only 15 minutes. The remaining time is for baking.  You might think that it would be dry and hard because it is bread, but it is actually very soft and moist. The texture is like a fluffy cake–yielding a tender, flavorful interior–mimicking the taste of a cake donut.

Total Time: 1 hour 5 minutes

INGREDIENTS

Bread Batter:

    • ¼ cup Canola Oil
    • ¼ cup Unsalted Butter, softened
    • 1 cup Sugar
    • 1 tsp Vanilla Extract
    • 2 Large Eggs, room temperature
    • 1 ½ cups All-Purpose Flour
    • 1 tsp Baking Powder
    • ½ tsp Salt
    • ½ cup Buttermilk
    • ½ tsp Molasses
    • ½ tsp Cinnamon
    •  
    • Topping:
    • ½ cup Unsalted Butter, melted
    • ¼ cup Light Brown Sugar, packed
    • ¼ cup Granulated Sugar
    • ½ tsp Cinnamon
  • INSTRUCTIONS:

    1. Prepare Oven and Pan: Preheat the oven to 350°F. Generously spray a loaf pan with non-stick spray.
    2. Mix Wet Ingredients: In a large bowl, combine butter, oil, and sugar. Mix until smooth. Incorporate eggs and vanilla, blending until smooth.
    3. Incorporate Dry Ingredients: Alternately add dry ingredients and buttermilk to the wet mixture. Beat after each addition, ensuring the batter is smooth. Remember to scrape the sides of the bowl.
    4. Make Molasses Mixture: Take ½ to ¾ cup of the main batter and place it in another bowl. Add in cinnamon and molasses, stirring well.
    5. Layer in Pan: Begin with half of the bread batter, laying it at the bottom of the loaf pan. Spoon half of the molasses mixture on top. Layer with the remaining bread batter and then top with the remaining molasses mixture.
    6. Swirl: Using a knife, gently swirl the molasses mixture into the bread batter to create a marbled effect.
    7. Bake: Place in the oven and bake for 40 to 45 minutes or until a toothpick inserted comes out clean. Once baked, let the bread cool in the pan for 10 minutes.
    8. Remove and Coat: Loosen the edges of the bread from the pan and gently remove it. In a shallow dish, combine the topping ingredients: cinnamon, brown sugar, and granulated sugar. Dip each side of the loaf into the melted butter, spooning the melted butter over edges as necessary. Then sprinkle the loaf with the sugar-cinnamon mix, ensuring all sides and the top are well coated.
 

Editor’s Note:   You really could get more than 6 slices from a loaf pan, unless you like them really thick.
Another Editor’s Note:   I made the bread, and it is good.  The Coating is tricky.  The bread is still hot when you’re supposed to be doing the dipping, and if you’re not REALLY careful it will break.  I just painted the top and sides with melted butter and then slathered the cinnamon sugar stuff on.  And have enough topping left over for another loaf.
