Summer Salmon Salad

Did you know Salmon is one of nature’s Super Foods?  Yup, it’s true, and here’s a great way to chill out while getting healthy.  This recipe comes from Chris Holmes.

SALMON PASTA SALAD

Prep time:  20 minutes
Cook time:  15 minutes
Chill for 4 hours
Serves 6

1 8 oz. package cavatappi pasta
1/2 cup sour cream
1/4 cup mayonnaise
3 Tablespoons grated parmesan cheese
1 Tablespoon dried dill weed
1 Tablespoon white wine vinegar
1 1/2 Teaspoons sugar
1 Teaspoon pepper
1 Teaspoon salt
1/4 – 1/2  Teaspoon garlic powder
1/2 Teaspoon paprika or Old Bay Seasoning
1 lemon, zested
3/4 cup chopped celery
6 ounces or more of cooked and chilled salmon, flaked into bite-sized chunks.

Method:
Bring a large pot of lightly salted water to a boil.  Cook cavatappi pasta, stirring occasionally, until tender yet firm to the bite.  (About 8 minutes.)  Drain, run under cold water, drain again, and allow to cool.

Whisk together the sour cream, mayo, parmesan, dill, wine vinegar, sugar, pepper, salt, garlic powder,paprika/Old Bay and lemon zest together.

Mix pasta and celery together in a large bowl.  Pour in dressing mixture and toss to coat.  Gently stir in salmon pieces.  Chill at least 4 hours before serving.
